Good Morning…  I must tell you that I did forget to take some pictures for today’s post, but I’ll do my best!  Thank you Jenn at Peas & Crayons for hosting WIAW!!!

This is my quick go to breakfast when I am in a hurry.  I put it in a little mason jar yesterday a.m. so I could eat when I got to work.  No time to have breakfast at home yesterday.  I love this stuff though.  Have you ever had Be Real Cereals?

I like to have a mid morning snack, no time yesterday.  However, I did munch on a few of these ginger treats. I really am enjoying them.

Healthy sELF Challenge begins TODAY!!!

Hi All-

Well, today is the first day of the Healthy sELF Challenge.  I hope you read about it yesterday & decided to join in on the fun of this group.  Here’s a tip that Lindsay & Elle who are running this challenge want everyone to know:  Remember, this challenge isn’t about doing every challenge perfectly on the exact day it’s written on the calendar! It’s perfectly ok to modify the ones you’re not physically able to complete and do the challenges on a different day depending on your busy schedules.

Well, today is meatless Monday, so I’m making a pumpkin/squash black bean chilli

Here’s what I threw into the crockpot:

2 cans black beans

1 box vegie stock

cut up butternut squash in 1″ pieces

6 garlic cloves chopped

2 cans diced tomatoes

1 can pumpkin puree

3 t. chili powder ( the more the better for me)

1 t. cumin

That’s it folks!  Put it on low for 6 hours or High for 4.5

viola- Enjoy it’s simple and delicious!

That’s my Meatless Monday for the Healthy sELF Challenge.  This is an easy one for me because I typically eat meatless anyway.  Every once in a while (maybe every 2 weeks, I’ll have some chicken).  This crockpot of chili will be my lunches for he week.  Crockpot of goodness.  I love prepping for the entire week.  Typically by Thursday, I’m either done with it or sick of it.  Thank goodness Benji helps indulge.  When we’ve both had enough, it’s been going to my brother in law.  Hate to waste the goodness.

OOps, failed recipe, popcorn & sELF~

This is such a funny thing to say, but sometimes my recipes don’t work & I hate wasting what I made.  Maybe it’s because I made it.  I’m not sure, because to be honest, I waste a lot of stuff.  I try not to, but sometimes it just happens around here.

Well, I tried what I thought was going to be a yummy dressing with plain cashews, nutritional yeast, carrots, some other stuff as well, but it was TERRIBLE.  So, I tried to spruce it up a bit, may have made it worse.  Well, I thought maybe somebody else around here (Benji) may like it, so I’ll serve it & not say anything.  Well, Benji has a miniscule bit.  I asked him how he liked it & he said it was good, but he wasn’t very hungry.  Then I began to giggle  & say, did you really like it.  He said YES!  I said, well I thought it was gross, did you really like it & he said, of course not.  Well, that batch of dressing (salad & all) landed directly in the trash!  Wasn’t even salvagable.  So, I’ll spare you the recipe :).

However, here’s something delicious & quick & easy!

Popcorn

I make my popcorn on the stove top with a little olive oil in the bottom of the pan.  I added popcorn salt, garlic powder & nutritional yeast when it was done & mixed it all together.  DELICIOUS  DELICOUS  DELICIOUS

Quick, Easy, Yum = nothing better!

Enjoy the superbowl!!!  Over here, 2 of the 3 boys are going out to watch the superbowl.  The other boy has no interest, so I told him I’d take him to a movie.  I’m not much of a football fan, but enjoy the commraderie of watching the game, the snacks & of course the commercials.  However, this year, I”ll be in a movie theater with my little guy because that’s what he wants.  Wonder if we’ll be the only ones…..

Sexy White Bread?

Why is white bread so sexy?

Yesterday morning I told my kids they were going to have hot dogs (chicken) for dinner & they said, can we please have white hot dog buns?  I always buy whole wheat, not too grainy for them, as they’re so fussy.  However, of late, they have not been eating any bread.  I think that’s fine if they don’t, they get their carbs so many other places, but are they in love with white bread?  Whole grain bread tastes so much better.  There’s no nutritional value in white bread, I despise it.  To me, sugar is better than white flour.  Now, that’s probably because I have a sweet tooth, but I really do despise white bread & am not sure what to do about it in my house.  Am I depriving my kids?  Do I succumb & battle other things?  Hmmm…. The perils of parenthood!  What would you do????

I am trying to eat “clean”.  I found a great way to begin is to purchase pre packaged foods with labels containing products that are familiar.  It honestly doesn’t matter how many ingredients are on the label, as long as you know what those ingredients are all about.  I find this to be a great tool when shopping.  I don’t do it for everything, because I do need to feed my boys & they like their white bread & other snacks.  It’s hard to do it with them, but I do try to limit things that I call “poision“!  Those are foods with 0 nutritional value, etc.

However, I do enjoy my sugar!  Did I tell you that already?  I love candy.  Not so much a chocolate fan, but candy, all types of candy; licorice, gummies, candy corn, red hots.  I better stop there, I could rant about my candy forever, but I’ll spare you.  Maybe that’s where my boys get it from…  But, I am an adult  food convert & know what eating healthfully does for me & I love it.  I do believe in moderation, which is quite difficult at times.  I do my best to eat clean/healthful 80% of the time & leave room for those things I call “poison”, candy, cookies, etc.  I wouldn’t call wine poison because that should be a necessity, right?!  A little wine & a little candy is good for everyone!!!!!

Roasting Broccoli Slaw

Preheat oven 425

spray jelly roll pan with Pam

put bag of slaw on pan & season with whatevery you like.

I like garlic chili paste, smoked paprika, Braggs

roast for 20 minutes.  I like mine well done!

Presto- all done.  I have been known to eat the whole bag.  It’s SOO good!

I also prepped this soup in the crockpot because I didn’t have anything for dinner or lunch & I don’t eat hot dogs.

I had all those foods on hand.  It was super quick & easy.  Guess what, it is also really good.  My whole house smells like curry.  I love curry!

I did my 7 miles yesterday as planned.  Was so happy to be finished.  It was slow & steady, but It seemed quite long, as I didn’t get around to getting anything good to watch.  I do want to watch Parenthood, think I’ll like that!  Finished my push ups & ball sit ups.  By then, Nemo was really enjoying my sweat & I needed to get up off the floor so she’d stop kissing me, so my workout was over!

I also graduated from P.T. yesterday.  Got a nifty t-shirt from Athletico.  I feel great & am doing just fine, so no more reason to go there anymore – Yea!

I told you that I’m doing 13 in 2013, right?  Well, that’s a lot of races to do during the warm season, let alone my family supporting all of that.  They’re great, but that’s a lot of Sundays to be racing.  So, I found Active 5k.  They’re virtual races you can enter.  I have to do a little more research, but I think this way I can reach my goal.  You should check it out: Anywhere5k.com.  This is an awesome to race anytime, anywhere.

This post is something new & exciting for me.  I’ve been following a lot of other bloggers who hook up with Jenn at Peas and Crayons and post their eats on Wednesdays.  I am a self described “foodie”.  I do love food.  I don’t eat because you should, I eat because I love food.  I get excited when I find a new food, new recipe, new product, etc.  I could talk about food all day long.  I am also a lover of trying new things & checking out other people’s eats.  So, I’m going to start posting WIAW (What I ate Wednesday).  It’s a fun way to share…

I’d like to tell you I had amy delicious quick crock vegie soup, but I didn’t!  I had a meeting & they had a deli tray.  Well, I simply can’t do deli.  I have a hard time eating poultry, as I ususally just don’t enjoy it, but deli-NO way!  So, they had some cabbage salad, mushrooms & cucumbers I munched on.  There was no protein there, so I knew I was in for  troubles later…

Well, the first package was from the great people over at Chobani!   I’ve been telling you about their kindness/goodness & I got an entire case of goodness!

So, we’re trying it all out here!  I thought that it would be good to put plain Chobani on shredded beets (one of my favorites) with some hemp seeds.  Well, I was WRONG!  Don’t misunderstand me, it wasn’t horrible.  But, I could certainly live without that combination again.  I like all 3 things, however, not together!

Stone loved the mango & Benji loved the peach.  My favorite flavor is passion fruit.  I don’t even mind the big seeds, it’s so yummy to me!

The website lists 10 reason to eat NuttZo.  It’s filled with tons of nutrients & protein.  Of course, I needed to put my spoon right in & give it a try.  It is really good.  I was surprised that it was so oily, but maybe I just didn’t mix it enough!  I’ll be sure that it’s mixed more next time!  They have 3 different flaovs, I tried the natural. I love all the added seeds, so this was just perfect for me!  However, it’s a bit pricy, so it won’t be a staple in my house, but I got a 50% discount code from Stuft Mama, so I gave it a shot!

As for my run: well I had plans to run 7 miles, but got interrupted by the little guys, so it ended at 5 because they wanted to get on the treadmill.  How could I say no when they want a turn to exercise?  So, I did my ball sit ups & decided it was time to start doing push ups & planks again, as my shoulder/neck pain is almost gone.  Wow, it’s amazing how in such a short time your muscles atrophy.  At least I feel that way.  I was only able to plank for 40 seconds & my push up test was only 30.  That’s pretty lame for me.  So, now I need to work extra hard to get back up to where I was before!  It’s a little frustrating to start over, but it’ll be done!

Tomorrow, I’ll try to get out of bed a bit earlier so I have my quiet time in the a.m.  During the week there are no interruptions, but the weekend is another story.  Is it better to relax in bed for a bit, which I never do during the week OR pop out of bed (like I do weekdays) in order to have my quiet time on the weekends?  It’s a tough call.  I like sleep, but I also NEED to exercise.  I am such a crabby patty if I don’t get my exercise in.  It’s for my mental health, not only physical for me. That being said, it’s good for everyone around me when I get my exercise in as well.  It’s amazing how much it affects me when I don’t get in a good workout.  I have an excess amount of “head trash” on those days.

Funny thing that happened today was that it was my step-daughters birthday, so we had lunch together.  That’s not the funny thing.  I made a yummy crock pot chicken dish, Kale salad, squash/potato kugel & shredded beets.  The best part was that she was so excited about the dessert; cinnamon deep dish cookie pie from Chocolate Covered Katie.  Honestly, there aren’t many people who would be excited about a chickpea cookie; but, this is SO good.  You’ve gotta try it.  Chocolate Covered Katie has the best healthy recipes!

The non-sit up

This is really not a sit up at all, but does a great job working those abs. I have a pinched nerve & have been having a very hard time with planks lately (which is a great core exercise, but haven’t been planking b/c of my neck) so,I’ve been doing these without any issues! They’re hard if you’ve never done them before (and not easy if you have), but start slowly & work you way up!

Promise it’ll be worth the effort.

I gotta tell you, it’s much easier to do exercises without a dog licking your face!  But, she’s so cute, isn’t she?

So, I do these after I run to get some core work in & then I feel like my workout is more complete.
