I promise, I will post a recap of the Springfield 1/2 marathon.  My internet has been down & it’s been a bit wacky, so until I get everything back to “normal” this is what I’ve got for now!

Quinoa Vegetable Soup

Put all ingredients into crock pot:

1 C quinoa

2 C kale

1 can diced tomatoes

4 C vegetable stock

1 onion, chopped

5 garlic cloves, whole (Because I was lazy, you can chop if you want.)

1 C mushrooms chopped (I used oyster mushroomes.)

bunch of parsley chopped (You can use any herb.)

2 C broccoli

1 can beans (I used lima beans.  Use whatever beans you like.)

Put in crockpot on high for 6 hours. Viola, that’s it!  You can add salt & pepper if you like, that’s all it takes!

I haven’t had soup in so long & this really hit the spot!

It’s absolutely easy & delicious!

New Shoes, Yummy green soup & banana pb treat!

Here’s a little warning that I’ve got a lot to share with you today.

I made a delicious green soup that I told you about the other day.

Easy Green Vegetable Soup

Ingredients:

2 containters of vegetable stock (8 Cups)

1 bunch asparagus

bag of organic baby spinach

10 garlic cloves peeled

1 leek cleaned & cut in 2″ slices

1 container portabello mushrooms

1 can cannellini beans

Put everything into crock pot on high & cook for 8 hours.

Use immersion blender to puree everything.  You can season with salt & pepper & any herbs if you like.  I didn’t add anything & loved it.  However, Benji needed salt & pepper.

I also added 1/2 C cooked quinoa to make it a one bowl meal.

It’s easy & delicious!

Peanut Butter Ice Cream 

Ingredients

  • 2 bananas, sliced and frozen
  • 2-3 tablespoons peanut butter
  • 1/4 Cup milk (I used Almond milk)

Instructions

  1. Combine ingredients in a food processor or blender and blend on high.
  2. Serve immediately or freeze for up to half hour before serving.

Ok & here’s the highlight of my day from yesterday…

Let me tell you a bit about this amazing company!  They are amazing shoes.  I learned about them through an add from my Klutch box.  They looked neat, so I started to investigate them.  Well, the kind people from Juil wanted me to try a couple pairs of their shoes, so they kindly sent me 2 pair to try.

Before I even show you the adorable & comfortable shoes that I got, take a peek at the packaging.  It’s like a gift.  They come in this fantastic box, all wrapped up in a silky colorful bag to carry your shoes (or something else if you like) & a cute thank you note for trying their shoes.

Aren’t they the cutest things you’ve ever seen.  Even with my big old bunions, they’re so comfortable & adorable.
