Sunday fun day!

Good Morning!

After my morning workout yesterday, we headed out to a gluten-free festival!  I was so excited to check out the goodies there & my family wanted to join me.  Funny thing, I told them we we’re going to a food fest, so they were all excited (thinking there may be candy there).  Shhh.   I did not telling them it was a gluten-free food fest!  I figured that they’d find out soon enough & was certain they’d find a lot of goodies they would like.  Well, we didn’t make it there!  There were a couple of different routes we tried to take because so many roads were closed because of the storms & then we had enough & decided not to go :(.  I was a little bummed, but it was silly to keep driving around, so we just called it quites!  Guess there’s always next year!

Kale slaw with Kale tahini pesto

I can’t take credit for the pesto, as I pinned it from Versatile Vegan.  It was so great over the kale slaw that I get from CostCo.  I’m sure it would be good with pasta or a potato or maybe even quinoa as well.  I also think that I’d add a little cayenne next time to give it a little more zing.  But, it’s quite good as it is.  It’s very “green/earthy” tasting, so beware!  It may be a lot for some.

I made these chocolate chip oat flour cookies.  They are good & there are only 2 left!  NO Sugar added my friends!  This is a winner.  They do have a hint of sweetness because of the Pure Liquid™ Vanilla Alcohol Free Stevia™.

Chocolate Chip Oat Flour Cookies

Ingredients
  • 2¼ cups of all oat flour (I made my own from oats)
  • 1 tsp baking soda
  • ½ cup of coconut oil
  • 1 tsp salt
  • 6 droppers of Pure Liquid™ Vanilla Alcohol Free Stevia™
  • 2 eggs
  • 1 cup of  chocolate chips

Preheat oven 350.

Mix all ingerdients together in mixer.  When everything is incorporated, add chips.

Drop by rounded tablespoon onto cookie sheet & bake for about 13 minutes on 350.

Esprit De She

I found out that I am now an Esprit De She ambassador!!!!!!!  Woo hoo!  Very exciting!  As an ambassador, I am going to run the event in Chicago on July 18.  Check it out here!  It sounds like a lot of fun & a great women’s race.  I’m all about the women’s events.  There’s something about the commraderie between women during a race & it’s so wonderful.  I hope you’ll consider joining me!!!!!!  Why not?

Now, nobody was home to help me take my photos, so please don’t look at the way my body is configured, just take a look at the adorable & comfy clothes!

The capri’s are PERFECT!  They’re not too low, nor too high.  They really feel perfect on my waist!  The top is a bit “sexy” for me.  I don’t usually wear anything low cut to show my clevage, but love the back of this top.  I know that running outside when/if the weather ever gets nice will be so great in this top.

I’m having issues with my phone syncing & it’s time to upgrade.  I just haven’t gotten around to doing it yet.

In the meantime, I’m back to my tabata virtual bootcamp workouts, yea!!!!!!  Our internet was down for a couple of days, so I wasn’t able to upload my workouts.  It was a little break, but now I’m back in full swing.  I did a 6 minute & a 30 minute & only had time to run 1 mile on the treadmill.  It was 38 degress yesterday a.m. when I took the boys to school.  IT was April 10- that is all wrong!  This is spring – ha!  We have the rain, just lacking the warm temps!  Ugg, and it’s supposed to snow a little on Friday!  It’s enough!

It’s the coziest, softest material ever.  I actually wore it in Springfield after the race & had 3 different people give me compliments.  The most amazing thing is that there were only 3 people walking around Springfield.  Ha- just kidding.  It was really desolate there, but that’s another story.  I love my Yogi clothes.  You need to check out their website for something for you.  Something new & fun & cozy for the spring.  Their stuff is really wonderful & they have all sorts of choices!

I’ve been trying to find a happy medium for the boys with healthy choices around here & we didn’t have any sweets in the house, so I told them I’d make cookies.

I made a variation of these!  PB chia coconut cookies

Ingredients:

  • 1 1/2 cups rolled oats
  • 1 tsp baking powder
  • 1/4 cup coconut flour
  • 1 1/2 tbsp chia seeds
  • 1/4 cup butter, room temperature
  • 1/4 cup brown sugar
  • 3/4 cup chunky peanut butter
  • 2 eggs
  • 1/4 C almond milk
  • 1/4 C almond meal
  • 2 T shredded coconut
  • 1 tsp vanilla
  • 1/2 cup dark or semisweet chocolate chunks or chips

Directions:

Preheat oven to 350 degrees and line a cookie sheet with parchment paper.

Mix everything in food processor except for chocolate chips. Pour everything into a bowl if you want the chips to stay whole.  Otherwise, add the chocolate chips & mix!

Use a mini scooper of dough onto the cookie sheet. I left them as round globs, but you can flatten if you like. If the dough is crumbly, press it together with your hands. Bake 10-12 minutes.

Enjoy!  They’re really tasty.  Stone likes them.  Truman is not a fan!  I am determined to find something I bake that he will like besides the chickpea cake.

FRIDAY & another giveaway!!!

I’ve been loving my tabata bootcamp virtual trainings.  I did miss Wednesday b/c of my crazy day, but I’ve been right on track otherwise.  Yesterday I did a 6 minute (killer) workout, a 30 minute workout & then ran on the treadmill for a fast mile.  I was pumped & wish that I had run more, but Truman decided to join me downstairs & then my run quickly ended!  I’m hoping to get in a long run this weekend.  Maybe it’ll be 35 or 40 degrees & I’ll try to get outside!  I have no idea what the weather is supposed to be, but a girl can hope, right?!
