This is going to be a long one…

As you know, I’ve been swamped with Passover happenings & family stuff.  Enjoying & exhausted all at the same time.  Friday was really a nice day & I decided to treat myself to a run outside, as I have been staying up late & haven’t been able to get up at 5am as I typically do on weekdays.  Friday it was 52, warm enough for me to go outside for my first run!  So, my niece/babysitter came over at 1:30 & I was ready to go outside for my 12 mile run.  I was equiped with my new Salomon HYDRO S-LAB SET that was sent to me to review here.

1st of 13 races of 2013, cauliflower and “muffins”

I made some fun things yesterday that I’m excited to share with you!

Roasted Cauliflower with a rub

I have never made this before & haven’t even tried it yet (it’s for tonight), but it looks & smells amazing!  Not sure what could be bad with roasted cauliflower & my favorite spices?!

I also made a “home-made/imitation” chocolate vita top muffin yesterday morning for breakfast & thought it was too much chocolate for me & my boys wouldn’t even give it a try.  Truman was convinced there was somehting hidden in it.  Seriously, it was chocolate & the kid wouldn’t give it a try because again, he thought that there had to be some vegetables hidden inside it.  So, I decided to get some pretty cupcake holders & put chocolate chips & sprinkles on top.  Don’t they look good?  Well, we’ll see if they’ll try them this time around.  Sometimes if I add chips or sprinkles, that’ll do the trick.

I also ran my 1st race for my 13 in 2013.  It was a virtual, but a race none the less!  I’ve got a couple of virtual races coming up.  This is a great way for me to stay motivated during the winter when it’s not yet racing season.

The boys are off today, so they’ll be keeping me busy.   I’ll let you know if they liked the “new pretty muffins with sprinkles & chips”.  I just don’t want them eating processed garbage!

If they’re good, I’ll give you the recipe (I haven’t had these yet either)!

Do you think my muffins look good?

Organic

Recently, I’ve been thinking about organic fruits & vegetables.  I know many people who only buy organic; but, I have yet to get on that bandwagon.  OF course I do believe it has to be better because no pesticides are used; but, wonder if it really makes that much difference.  And, when is it best to purchase organic or is it not necessary for everything.  I was reading an article which summed it up beautifully & easily for me:

If you peel it before eating (don’t eat the skin), organic is not important!

I think I’ll try to follow this rule from now on.  that’s a great rule.  Althoguh, it’ll definitely get me to buy more organic, as I typically eat the skin of so many fruits & vegies.  Especially now that I’m a fan of  kabocha squash!!!!  I eat the whole thing (minus the seeds of course).   It’s SO EASY!  If you haven’t had kabocha squash yet, try it before the season ends.  Most produce stores carry it, as does Whole Foods.

Easy is also important.  I love to cook, but don’t always have time to make everything I want to because there are so many other things that take presidence.

I’ve recently found the foods that are already prepped & need only a little tweeking before cooking.  My favorites are: broccoli slaw, cut & peeled butternut squash (CostCo), mix of kale/brussel sprouts/broccoli slaw (CostCo), shredded brussel sprouts (Trader Joes).  I know there must be more, but these come to mind quickly as those are the ones I frequently purchase.

Talk about other easy prepping.  Do you Pinterest?  I seriously don’t look at cookbooks anymore.  I have many boards where I keep my recipes organized & LOVE it.  I love reading cookbooks, getting ideas, hanging out at the book store reading cookbooks, but now I’ve got Pinterest.  I browse my pins to see what I will prepare for my meals all the time.  When people tell me they don’t use Pinterest, I give them so many reasons to use it & show them my pins.  I do know I’m under utilizing Pinterest, but I’m happy that it keeps my recipes organized & I LOVE browsing for new finds.

I do wish that I could cook all day long.  I’d love it.  I know B would love it.  Well, can’t do that, so I’ll just prepare when I can.

I need a new movie to watch next week while I run.  Any ideas? someone told me the name of a good movie to get from the Redbox & I didn’t write it down, so I forgot it!  That’s how my brain works these days; if it’s not written down, I don’t remember- yikes…
